Carrot cake
Description
Recipe for a delicious chocolate glazed carrot cake. Perfect for tea time.
Ingredients
- 3 medium peeled and diced carrots
- 1/2 cup oil
- 4 eggs
- 2 cups suggar
- 2 1/2 cups all-purpose flour
- 1 1/2tsp baking soda
- 1 cup condensed milk
- 1 tbsp butter
- 3 tbsp cocoa powder
Steps
- Preheat the oven to 180ºC. Prepare the pan by spraying with making spray or buttering and lightly flouring.
- Using a blender blend the oil, the eggs and the diced carrots for 1 minute.
- Add the suggar to the mix and keep blending for more 4 minutes.
- In a large bowl add the flour, the baking soda and the blended mix. Whisk through to combine well.
- Pour the cake batter in the pan. Bake it for 40 minutes.
- In a pan mix the condensed milk, the butter and the cocoa powder cooking in low temperature, mixing all the time, till get a shining dark oozing glaze.
- Remove the cake from the oven and allow to cool for about 10 minutes before removing from the pan. Glaze the cake with the chocolate glaze.
